Madd Puttu

Madd thoppu is a medicinal plant (Justicia wynaadensis) which grows during monsoon. The extract of madd thoppu is used to prepare madd kool, madd payasa, madd puttu and many more dishes.

Ingredients

  1. Raw rice – 1 Cup (Soak for 12 hrs)
  2. Salt
  3. Madd thoppu extract – 5-6 cups

Madd thoppu extract

  1. Take a large pan half filled with water and place it on the stove on medium heat. When the water is hot put the madd thoppu including the stem and let it cook on medium heat for about 1-1/2 hrs.
  2. Strain and reserve the coloured liquid and discard the leaves. The extract is ready to be used.

Method

  1.  Drain the soaked rice and grind it with 1cup of madd thoppu extract to a very fine paste.
  2. Add the remaining extract to the ground mixtue with little salt and cook till it forms smooth custard. Keep stirring and see that no lumps are formed.
  3. When the mixture is thick enough quickly pour it over a ungreased plate and thump the plate on the countertop to level the mixture.
  4. Let it cool and then cut into pieces and serve.
  5. You can also make sweet madd puttu by adding sugar or Jaggery to the mixture with the same recipe.

Best enjoyed with honey, Jaggery  or sugar syrup
