It is traditionally prepared with pork, freshly ground aromatics and <a href=\"https:\/\/kodavaclan.com\/kodaguheritage\/kartha-masala-dry-roast-masala-powder\/\"><em>Kartha Masala,<\/em><\/a> a roasted spice blend.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\" wp-image-816 alignright\" src=\"https:\/\/kodavaclan.com\/kodaguheritage\/wp-content\/uploads\/2018\/05\/pandi-300x167.jpg\" alt=\"\" width=\"377\" height=\"210\" srcset=\"https:\/\/kodavaclan.com\/kodaguheritage\/wp-content\/uploads\/2018\/05\/pandi-300x167.jpg 300w, https:\/\/kodavaclan.com\/kodaguheritage\/wp-content\/uploads\/2018\/05\/pandi-768x427.jpg 768w, https:\/\/kodavaclan.com\/kodaguheritage\/wp-content\/uploads\/2018\/05\/pandi.jpg 800w\" sizes=\"auto, (max-width: 377px) 100vw, 377px\" \/><\/p>\n<p>&nbsp;<\/p>\n<h2>Ingredients<\/h2>\n<h3>For the Pork<\/h3>\n<ul data-spread=\"false\">\n<li>1 kg pork, preferably with a good balance of meat and fat<\/li>\n<li>2 medium onions<\/li>\n<li>10 green chillies<\/li>\n<li>1-inch piece ginger<\/li>\n<li>10 cloves garlic<\/li>\n<li>1 teaspoon red chilli powder<\/li>\n<li>\u00bd teaspoon turmeric powder<\/li>\n<li>Salt to taste<\/li>\n<\/ul>\n<h3>For the Curry<\/h3>\n<ul data-spread=\"false\">\n<li>Kartha Masala (Kodava dry-roasted spice blend), as required<\/li>\n<li>Kachampuli (Coorg vinegar), as required<\/li>\n<li>A little water<\/li>\n<\/ul>\n<h2>Method<\/h2>\n<h3>1. Marinate the Pork<\/h3>\n<p class=\"isSelectedEnd\">Cut the pork into medium-sized pieces and place it in a bowl. Add the red chilli powder, turmeric powder and salt. Mix thoroughly so that the spices coat the meat evenly.<\/p>\n<p class=\"isSelectedEnd\">Allow the pork to marinate for about <strong>30 minutes<\/strong>.<\/p>\n<h3>2. Prepare the Aromatics<\/h3>\n<p class=\"isSelectedEnd\">Coarsely grind the onions, green chillies, ginger and garlic.<\/p>\n<p class=\"isSelectedEnd\">Traditionally, these ingredients may also be crushed using a <strong>grinding stone<\/strong>, which gives the curry a rustic texture and helps retain the character of the traditional preparation.<\/p>\n<h3>3. Cook the Pork<\/h3>\n<p class=\"isSelectedEnd\">Place a heavy-bottomed vessel over medium heat and add a small quantity of water.<\/p>\n<p class=\"isSelectedEnd\">When the water begins to boil, add the coarsely ground onion, green chilli, ginger and garlic mixture. Allow it to cook for a few minutes until the raw aroma of the ingredients disappears.<\/p>\n<p class=\"isSelectedEnd\">Add the marinated pork and mix well.<\/p>\n<p class=\"isSelectedEnd\">Cover and cook until the pork becomes tender and releases its natural fat and juices. Stir occasionally and add a little water if necessary to prevent the curry from sticking to the vessel.<\/p>\n<h3>4. Add Kartha Masala<\/h3>\n<p class=\"isSelectedEnd\">Once the pork is completely cooked and tender, add the <a href=\"https:\/\/kodavaclan.com\/kodaguheritage\/kartha-masala-dry-roast-masala-powder\/\"><em>Kartha Masala<\/em><\/a>.<\/p>\n<p class=\"isSelectedEnd\">Mix well and allow the curry to simmer for another <strong>2\u20133 minutes<\/strong>, allowing the roasted spices to blend with the pork and its natural juices.<\/p>\n<h3>5. Finish with Kachampuli<\/h3>\n<p class=\"isSelectedEnd\">Finally, add <em><a href=\"https:\/\/kodavaclan.com\/kodaguheritage\/kachampuli\/?utm_source=chatgpt.com\">Kachampuli<\/a><\/em>, the distinctive souring agent used in Kodava cuisine.<\/p>\n<p class=\"isSelectedEnd\">Add it gradually according to taste and allow the curry to cook for just a few seconds before taking it off the heat.<\/p>\n<p class=\"isSelectedEnd\">The finished Pandhi Curry should have a rich, dark appearance, a deep roasted-spice flavour and a characteristic balance of spice, salt, fat and the sharp tang of Kachampuli.<\/p>\n<h2>Serving<\/h2>\n<p>Pandhi Curry is traditionally served with:<\/p>\n<ul data-spread=\"false\">\n<li><em><a href=\"https:\/\/kodavaclan.com\/kodaguheritage\/kadambutt\/\">kadambutt<\/a><\/em> \u2013 steamed rice dumplings<\/li>\n<li><em><a href=\"https:\/\/kodavaclan.com\/kodaguheritage\/paputtu-broken-rice-cake-cooked-with-milk-and-coconut\/\">Paaputt<\/a><\/em> \u2013 traditional Kodava rice preparation<\/li>\n<li><em><a href=\"https:\/\/kodavaclan.com\/kodaguheritage\/akki-otti-flat-bread-made-of-cooked-rice-rice-flour\/\">otti<\/a><\/em> \u2013 rice flatbread<\/li>\n<\/ul>\n","protected":false},"excerpt":{"rendered":"<p>Pandhi Curry, the traditional Kodava pork curry, is one of the most iconic dishes of Kodagu (Coorg) cuisine.
