Rice Ambali

Traditional Rice Ambali

Ingredients

  • 1 cup rice
  • 5–6 cups water
  • Salt, to taste
  • Optional: a little buttermilk/curd, if serving it as a cooling drink-style ambali

Method

  1. Wash the rice thoroughly.
  2. Place the rice in a deep cooking pot with 5–6 cups of water.
  3. Bring it to a boil and cook over a low wood fire or stovetop.
  4. Continue cooking until the rice becomes very soft and begins to break down into a thin, porridge-like consistency.
  5. Stir occasionally using a long-handled Ambali Chatuwa.
  6. Add salt according to taste.
  7. Serve hot as a simple, nourishing rice porridge.

Traditional variation: The cooked ambali can be allowed to cool and then mixed with buttermilk or curd and a little salt, producing a refreshing version suitable for warm weather and agricultural work.
