Madd Payasa

Ingredients

  1. Raw Rice
  2. Salt
  3. Madd thoppu extract
  4. Sugar or Jaggery
  5. Grated Coconut

Madd thoppu extract

  1. Take a large pan half filled with water and place it on the stove on medium heat. When the water is hot put the madd thoppu including the stem and let it cook on medium heat for about 1-1/2 hrs.
  2. Strain and reserve the coloured liquid and discard the leaves. The extract is ready to be used.

Method

  1. Add raw rice to the madd thoppu extract and cook until the rice becomes soft.
  2. Add Jaggery and pinch of salt. Keep stirring and once it is ready, add grated coconut and mix well. Serve hot with ghee.
