Kartha Masala (Dry roast Masala powder)
Pandhi curry is incomplete without kartha masala. Not only for pork..u can even use it to prepare chicken fry….potato fry….mango curry etc.

- Coriander seeds -2 tablespoon
- Cinnamon -1 inch
- Cloves -6
- Peppercorns -2tbsp
- Cumin seeds -1/12 tbsp
- Mustard seeds -1tsp
- Methi – 1 small tsp
- Curry leaves (optional but recommended) – 10
Method:
Dry roast all the ingredients separately and grind them to make a powder.
